Cajun ChickPea-Nuts

I never thought I'd like eating chickpeas, but prepared like this, they're pretty good. Get 'em crunchy enough and they are a little reminiscent of a corn-nut.

Toss 1 can of rinsed & drained(blot w/paper towel) chickpeas with a little olive oil(or spray cookie sheet w/olive oil spray) and 1 1/2 TBS Cajun spice. Spread out on cookie sheet and bake for approximately 40-45 min. or until crunchy in a 350ยบ oven. The trick is to get 'em crunchy enough. Taste test when they come out of the oven, if they aren't crunchy enough for you, put them back in and crank up the heat a little. I would imagine these would also be good with other spices.
